Dum Aloo

Dum Aloo is one of the most cherished and flavorful dishes from the beautiful valley of Kashmir. Known for its rich aroma, velvety texture, and perfect balance of spices, this dish captures the essence of Kashmiri cuisine — simple ingredients elevated through slow cooking and delicate seasoning.

 

The word “Dum” means “to cook on slow heat,” and “Aloo” means “potato.” True to its name, Dum Aloo is made by slow-cooking small, fried baby potatoes in a creamy, spiced yogurt gravy. The process allows the potatoes to absorb all the flavors of the rich sauce, resulting in a dish that’s both hearty and aromatic.

 

The base of Kashmiri Dum Aloo is made with curd (yogurt), fennel powder, ginger powder, Kashmiri red chili, and aromatic spices such as cardamom, cloves, and cinnamon. The vibrant red color of the gravy comes from the Kashmiri chili powder — not too hot, but beautifully rich and appetizing. The use of mustard oil adds an authentic regional touch, enhancing the depth and aroma of the dish.

 

Traditionally served with steamed basmati rice or naan, Dum Aloo is a favorite during family feasts, weddings, and festive occasions. Despite being vegetarian, its royal taste and creamy texture make it one of the highlights of the famous Kashmiri Wazwan (multi-course meal).
